And now for something completely different:

In honor of NOTHING AT ALL HAPPENING YESTERDAY, and the fact that the day was COMPLETELY UNEVENTFUL, I am making Key Lime Pie.

I made pancakes, bacon, and eggs. The pancakes were gross, and I didn't eat the eggs. Guess I should leave the culinary escapades to someone else.

Let me know how your pie turns out. I certainly hope it's better than my pancakes.

At least there was bacon. I made pig candy yesterday (bacon covered in brown sugar and baked). And guac. And people loved it. Too bad I don't know why people were over at my house. Must have been a law school event. Because it was CERTAINLY NOT ANYTHING THAT AFFECTED ME.

That (pig candy) sounds wonderful! How do you do it? And I ask simply because one serving of bacon a day is just not enough.

I made salsa this afternoon. It was a big hit with the fiance. Too bad we don't have "people" to come over, for ANY reason!

Sundays make me sad. There's always that thought in the back of my mind, "School in the morning, long week ahead, don't enjoy yourself too much!" And today I'm saying back to that thought, "Screw you! I'm having a glass of wine!"

It IS fantastic! Preheat oven to 350, coat both sides of bacon with brown sugar, place in non stick pan, bake for 20-25 minutes, flipping halfway through.

The flipping may or may not be useful - I think it makes the bacon crispier. And I cut the bacon in half last time, so the pieces were 3 inches instead of 6 inches long, a much more managable length to eat. And I curl them a little when I take them out of the pan into pretty little coils.

Despite the fact that Pink Shoe's photo of her Key Lime Pie makes it look like a pan of urine, I can attest that is in all honesty quite delicious!

the key lime pie looks fabulous. the pig candy sounds sooo good. I am definately going to have to make it soon. Ask Mr. Pink Shoe - does it really taste like candy or does it taste like some sort of extra sugary brown sugar glazed pig?
